Braised Large Intestine

Rub the front side of the large intestine with a spoonful of flour for 5 minutes, then wash it off. Turn out the inside of the large intestine again and repeat the same steps. Then add 1 tablespoon of vinegar and 5 tablespoons of salt, knead for 5 minutes, and then wash. Finally, turn the inside of the large intestine to the original front, then pour the vinegar and salt, and repeat the previous steps. Rinse with clean water and drain the water.

The cleaned large intestine is placed in a pot of boiling water, blanched for 2 minutes, and then taken out and washed.

Take out the blanched large intestine, cut it into shorter lengths with a knife, and put it into the refilled pot. Put in a handful of dried chili, a handful of Chinese pepper, 3 star anise, and 2 cinnamon. Turn on high heat, wait for the water in the pot to boil, then turn to medium and low heat, simmer for 2 hours before cooking.

Take out the boiled large intestine and cut it into slices with a hob, and then put the stock in the pot to set aside.

Wash the pot. When the pot is hot, pour in an appropriate amount of rapeseed oil, pour the chopped ginger and garlic into sauté for 3 seconds, then pour in the chopped large intestine and stir fry a few times. Pour in 1 teaspoon of braised soy sauce, 1 tablespoon of light soy sauce, 3 ml of vinegar, stir fry a few times, put half a teaspoon of salt, and then pour in an appropriate amount of the broth. (It is advisable to just under the surface of the large intestine) Finally, add 2 teaspoons of sugar to make fresh.

Collect the sauce over high heat and stir fry from time to time to prevent sticking to the pan. When the soup in the pot is completely absorbed, sprinkle the chopped green onion, turn off the heat and set the pot to a plate.
Tips:
1. When washing the large intestine, grasp the thick end and enema the large intestine inside, so that it is easy to turn the large intestine.
2. Be sure to pour in the right amount of soup, wait until the soup in the pot is completely absorbed, and then start the pot. Such braised large intestine is so oily that you will have an appetite at first sight.
