Braised Mentai Fish

Wash the mintai fish and cut into 2~3 cm thick sections, mix well with cooking wine, pepper, and salt, and marinate for a while

Hot pepper, pickled pepper, green pepper, and bean paste

Cut green onion, ginger, garlic and set aside

Put oil in a pot to heat up, add bean paste, pickled peppers, hot pepper rings, green onions, ginger, garlic, and dried Chinese pepper to fry out red oil

Put a little light soy sauce, put half a bowl of water to boil

Pour in the minta fish, bring to a boil, add salt, sugar, and vinegar

Turn the high heat to a low heat for 20 minutes until the soup is concentrated and add a little chicken powder.
Tips:
1. When stewing fish, don't stir fry, the fish is very easy to break;
2. Add enough soup at one time, do not add water at the end halfway;
3. Due to the tighter meat quality of mentai, the cooking time should be longer, generally not less than half an hour.
