Braised Noodles with Beans

Shake the thin noodles and put them directly into the steaming tray. After the steaming pot is steamed, put it into the pot and steam for 10 minutes. Take out the steaming tray to shake the noodles, put it into the pot again, and continue to steam for about 3 minutes; the steamed noodles will shake loose again. It must be shaken completely, you can add a few drops of sesame oil to prevent sticking

When steaming the noodles, prepare the ingredients: lentils (wash first and then remove the old tendons, in order to remove pesticide residues); break the kidney beans into sections

Cut pork belly and lean meat into slices separately; mince scallion and ginger

Mince garlic; start the wok, heat the wok with cold oil (the oil is a little bit more than usual, the noodles absorb oil); add the pork belly, stir-fry on low heat until the meat slices spit oil, the edges are curled, and the surface is browned

Then add the lean pork slices, stir-fry until the color changes; add the chopped green onion and ginger and half of the minced garlic, stir-fry the flavor

Add kidney beans, turn to high heat, and stir-fry until the kidney beans are brightly colored; add cooking wine, light soy sauce and soy sauce, and stir-fry until the kidney beans are colored

Add boiling water, about 1 cm under the kidney beans, a little more water; stir fry evenly, after the high heat boils, turn to medium heat, cover the pot and simmer until the kidney beans are about 7-8 mature

Open the lid, stir fry evenly, and put out a small bowl of soup for later use; flatten the kidney beans with a spatula

Spread the noodles evenly on the kidney beans, cover the pot and simmer. During the process, open the pot and check it to avoid simmering; turn off the heat when the soup is almost collected, and evenly pour in the soup that was prepared in advance

At the same time, add the other half of minced garlic, and season with a little salt and chicken essence (according to your own taste); use two or more chopsticks, open the bow from left to right, flip up and down, and mix vigorously.
