Braised Noodles with Beans
1.
The noodles are pressed by my mother with a small noodle pressing machine. Don't worry about food; remove the two ends of the beans, tear off the side ribs, wash them, and break them into small pieces by hand; slice the pork and use a knife with green onion, ginger, and garlic.
2.
Heat oil in a pan, add pork and stir-fry until its color changes, add green onion, ginger, garlic and fry until fragrant, then add soy sauce and fry until fragrant for color, add appropriate amount of boiling water, and then put the beans in
3.
The important point is that the amount of boiled water should not be too much, don't overrun the beans, and don't be flat with the beans, less, the surface will be very soft when the water is too much, and the water stains will not taste good. Cover the pot and simmer on medium-low heat until the beans change color, turning several times in the meantime
4.
Shake off the noodles and spread them evenly on the beans. Cover the lid and continue to simmer. Use the hot steam in the pot to simmer the noodles.
5.
After the noodles are cooked, add salt to taste, and use chopsticks to mix the beans and noodles evenly. If the moisture is too large, you can open the lid and continue using a low heat for a few minutes to let the moisture evaporate. In addition, smash a garlic juice, pour it on the stewed noodles and mix well when eating, it is delicious. If you don’t like garlic, you can ignore this step
