Braised Noodles with Beans, Potatoes and Spare Ribs

1. Prepare the main ingredients

2. Put 450 grams of flour into a larger basin, pour boiling water, stir with chopsticks to form a lump, it feels a little dry, then dip it in cold water and make a dough

3. Knead out the dough and place it on the table, sprinkle with flour, roll out rectangular slices, and cut into noodles

4. Put the ribs in a pot of boiling water

5. Boiling and blanching bleeding water impurities

6. Remove the controlled water and put it in an electric pressure cooker

7. Prepare the stewed pork ribs: spring onion, ginger, cinnamon, bay leaf, star anise, fennel seeds

8. Add appropriate amount of hot water to the electric pressure cooker and simmer for 30 minutes. If you have more water, you can drink the ribs soup

9. Beans and potatoes are processed during the time when the ribs are stewed

10. The ribs are simmered (I didn't put salt in it, put it in the soup)

13. Peel the tomatoes and cut into pieces

19. Add 15 grams of Weijixian soy sauce

24. Evenly use chopsticks to poke apart, taking care not to stick to the edge of the pot

25. Cover and simmer for 5 minutes on high heat, then simmer for 8 minutes on low heat

26. The noodles are loosely picked up with chopsticks and then simmered

27. Use chopsticks to mix the dishes and noodles thoroughly

28. The savory noodles with beans, potatoes and ribs are ready

4. The most important step is stir-fried noodles. My home makes braised noodles a little bit different from yours. We use boiling water for making noodles. The noodles made with boiling water are soft and firm.
