In the past, I would buy some hairtails during the Chinese New Year and make them on the night of New Year's Eve. A friend from Zhejiang sent some fresh hairtail a year ago. I cleaned them, cut them into sections and froze them, and ate them slowly.

Braised Octopus Section

1. Wash the hairtail, cut into sections, draw a few knives to drain

2. Prepare chili, ginger, garlic

3. Boil in a frying pan until it slightly smokes, spread cornstarch on both sides of the octopus, and fry it in the pan until golden and remove.

4. Leave the bottom oil in the pot, put in a bowl of water, dark soy sauce, chili, ginger, garlic, octopus, cooking wine, salt and cook until the soup is thick and only a little left

5. Sprinkle chopped green onion

Tips:

The surface of the hairtail is smeared with corn starch, the oil is not easy to splash, and the fish skin is not easy to break
