In the past, when buying male fish, I always chose fish heads and ignored the fish tails. This time, because the fish shop owner was too busy, I didn't ask too much. I ordered the whole male fish, the fish heads were made into soup, and the fish tails were braised in brown sauce. The stew is very tasty, and the meat is tender and juicy.

Braised Paddle

1. The tail of the male fish is changed two knives into three pieces (not cut) and poured into the cooking wine and salted to taste

2. Cut scallions and red chives into sections, peel the garlic and set aside

3. Put oil in the pot, stir fragrant ginger slices, and fry fish tails until golden brown on both sides

4. Pour in cooking wine and light soy sauce, add garlic and shallots, and continue to fry for 1-2 minutes

5. Add a bowl of water, sugar, dark soy sauce, salt, cover and simmer for 10-15 minutes

6. Pour in water and starch to blend until the soup is thick

7. Add the shallots and turn off the heat
