Braised Partial Fish in Brown Sauce

Take the fish out of the refrigerator to thaw. Because it was brought from mother’s house, the internal organs were not removed. Clean up the internal organs after thawing. The fish are quite fishy, so you can wear gloves.

Cut the green onion, ginger, garlic and set aside

Pour oil in the pan, a little bit more oil than the cooking. You need to fry the fish on both sides. Too little oil will stick to the pan☺️

After the fish is fried on both sides, pour the prepared green onion, ginger, garlic, star anise, and pepper into the pot and fry until fragrant.

Add the cooking wine to remove the smell after sautéing the ingredients

Add oyster sauce

Add light soy sauce, if the color is too light, add dark soy sauce to adjust the color.

Add water and appropriate amount of salt, and put less salt.

Turn the high heat to medium heat, simmer slowly until the soup thickens, collect the juice and it will be out of the pot. Put the fish out, add coriander segments to the soup, you don’t need to add it if you don’t like it, just pour it on the fish
