Braised Pork Heart

Cut the pig's heart in half and wash away the blood clots.

Soak until the water is clear, change the water halfway

Pour cold water into the pot and add green onion, ginger slices, and cooking wine. Boil for three minutes, remove the pig's heart, and rinse with hot water.

Add appropriate amount of water to the pot, put green onion, ginger, garlic, red pepper, and braised pork. Put 2 star anises, 40 peppercorns, 1 small piece of cinnamon, and 5 bay leaves without any ingredients.

After the water is hot, add the pig's heart, add 1 tablespoon of cooking wine, 1 tablespoon of light soy sauce, appropriate amount of soy sauce, and 2 pieces of rock sugar. If you have fish sauce at home, you can add a spoonful of oyster sauce.

After the pressure cooker is over medium heat, turn off the heat and cook for about 10 minutes to turn off the heat.

After the pressure is naturally relieved, open the lid and add an appropriate amount of salt, simmer for 10-15 minutes, and soak overnight. In terms of taste, I still like to simmer in a cast iron pot over low heat

After soaking overnight, remove the slices.
9.
Make a dip with garlic, vinegar, chili pepper, and coriander.
