Braised Pork Ribs

Wash the large row and drain the water. Use a meat hammer to break the muscle tendons, both sides are needed.

Add scallion, ginger, garlic, light soy sauce, dark soy sauce, cooking wine, cornstarch and egg white to the hammered meat. Knead it evenly, and marinate for more than 2 hours to make it delicious.

Heat up the oil in a pan, and let the oil spread evenly after it has heated up to 80%.

Put the pickled ginger on the bottom of the pan and fry it, put it in a large row, and fry on a low fire.

Fry on one side until browned, then turn over and fry on the other side until browned on both sides.

Add boiling water and marinated sauce and cook on high heat for about ten minutes.

Cook until the soup is thick and ready to be served.

The braised steak in thick oil red sauce is delicious without sugar.
Tips:
There are two secrets if you want to make a big row.
1. The meat tendons must be broken for large rows.
2. When marinating, use egg white and starch to lock in the moisture so that the large row will be fresh and smooth.
