Braised Pork Trotters

Peel garlic, peel and slice ginger.

Wash and dice green onions.

Wash the trotters in a pot under cold water, boil, and remove the blood from the water.

Put the trotter into cold water, and wash the foam on the trotter.

Wash the wok, add appropriate amount of oil, add sugar when the oil is 50% hot, turn on a low heat to let the sugar slowly melt.

When the sugar melts, it will bubble up. When the bubbles are full, add the washed pig's trotter and stir-fry until each piece of the trotter is coated with sugar.

Add appropriate amount of water, so that all the trotters are covered, add star anise, cinnamon, ginger and garlic, cover the pot, bring to a low heat and simmer for about 50 minutes.

Add some salt and simmer for another 10 minutes.
9.
Sprinkle with chopped green onions
Tips:
1. When frying the sugar color, be sure to low heat and melt slowly, otherwise it will burn easily.
2. Pay attention to the amount of water in the pot during the whole process of braising.
