Braised Pork Trotters

Put the bought trotters into a pot of cold water, turn on the fire, and prepare to blanch.

After boiling, remove the bubbles and turn off the heat.

Remove, rinse, and drain.

Pour the old brine into the pot and melt.

Put in the trotters.

Add dried chilies.

Star anise bay leaves, braised in soy sauce.

Add brown sugar.

Bring to a high heat, turn to a low heat, and cook for about an hour, then turn off the heat.

Turn off the heat and simmer for hours to let it fully taste.

Tips:
Every time you use the old brine, you need to add some spices to adjust its flavor. Brown sugar and braised soy sauce are used to combine saltiness and color.
