Braised Scallions

Remove the head, scales and internal organs of horsefish, wash and control water. In addition to the oil, put the other liquid seasonings in the sauce in the bowl for later use.

Mackerel wrapped in flour for frying in a frying pan.

Fry on both sides until golden brown.

In a frying pan, add green onion, ginger, garlic and star anise to saute, put the fried horsefish, sugar and salt, pour the sauce, add water, cover and bring to a boil.

Put the shallots around and cook for about 10 minutes.
6.
Plate.
Tips:
Frying fish is delicious only if you fry the fish thoroughly over medium heat.
Add enough water at a time to be level with the fish.
