Braised Seaweed Soup with Spare Ribs

Wash the ribs and cut into pieces

Soak the kelp in hot water, wash and cut. I like to soak in hot water to save time.

Boil the ribs with ginger slices and cook under cold water, add cooking wine, do not cover until the water boils. The reason for not covering the lid is to let the fishy smell of the ribs volatilize.

I forgot to take pictures in the next steps. Rinse the ribs in blanching water, add water and a little cooking wine, and simmer over high heat. Turn to low heat and simmer for about 50 minutes. Add kelp and simmer for another 20 minutes. When the simmer is ready, add salt to taste. Then turn off the heat and start eating.
Tips:
I only used cooking wine and ginger for this dish. I didn’t put any other seasonings. In order to taste the umami flavor of ribs and kelp, it was relatively light.
