A side dish that turns waste into treasure. Ever since I ate three yuan and a small dish of shiitake mushroom roots in the Buddha Xiangge Pavilion of the Dafo Temple a few years ago, I will never worry about the extra shiitake roots that are added to the cooking! In a very thoughtful way, shiitake mushroom roots are torn into shreds and marinated with various seasonings. The taste is rich and chewy.

Braised Shiitake Root

1. Wash the shiitake mushroom roots and dry, tear into shreds, slice ginger

2. Put vegetable oil in the pot, put ginger slices and sauté

3. Add shredded shiitake mushroom roots and stir fry

4. Add the braised sauce and water and stir well

5. Turn to low heat, cover and simmer for 10 minutes

6. Heat up the juice until shredded shiitake mushrooms are slightly dry
