Braised Turtle Soup

Ask the store to help kill the turtle when you buy it. Don't cut off the turtle shell, keep it intact, and take it home and clean it for later use.

An appropriate amount of quail eggs (you can buy ready-made peeled shells or raw ones, cook them and peel them off at home), peel off ginger, wash and slice them, rinse off angelica and wolfberry.

Put half a pot of water in the pot to boil, pour the cleaned turtle into the pot, blanch for 2 minutes, so that each piece of turtle can be soaked in the hot water.

After the turtle is blanched in water, take it out and tear off the outer layer of membrane. There is a layer of membrane on the whole turtle, including the turtle skin. All must be cleaned up.

After the turtle is cleaned, clean it, put it in a large bowl, add ginger slices and angelica, and then add an appropriate amount of water.

Put an appropriate amount of water in the steamer to boil, put on the steaming rack, put the turtle on the steaming rack, cover the lid, steam for 5 minutes on high heat and simmer on medium heat for 30 minutes.

After simmering, add the quail eggs, add some salt, and continue to simmer for 15 minutes.

After the stew, add the wolfberry, add the right amount of chicken essence and mix thoroughly, then it can be served.

Tips:
1. Put the soft-shelled turtle in the pot and blanch it for two minutes. After removing it, tear off the outer film. The whole soft-shelled turtle must be torn off.
