Braised Wild Pork

The wild boar is cleaned and cut into small pieces

Pot under cold water, wild boar smells big, add ginger slices and cooking wine together, boil for 5 minutes.

Wash the blood foam, remove and drain the water.

Prepare the spices and add more peppercorns when roasting the meat.

Put oil in the pot, add rock sugar, fry the sugar color on a low fire, and then add the boiled wild pork and stir fry for color.

Add pepper, star anise, cinnamon, bay leaf, ginger, dried chili and other spices and fry for a while.

Add cooking wine, light soy sauce, dark soy sauce and stir fry evenly.

Fill the pot with water to submerge the wild boar, add a small amount of vinegar, turn to medium and low heat after the high heat is boiled, today I simmered for about 1.5 hours, season the meat with salt when the water becomes less, and collect the juice on high heat.
