Braised Winter Melon

Peel the wax gourd, remove the flesh and wash it.

Change the knife to cut into small squares, and then cut each piece with two cuts horizontally and vertically, but don't cut off, the part near the skin is connected to the whole.

Pour oil in the pan, add winter melon and stir fry for 2 minutes.

Add appropriate amount of salt, a few drops of dark soy sauce and dried chili seeds and stir-fry, then add water that covers one-third of the winter melon, cover the pot and simmer on medium heat for five minutes, stir fry 2 to 3 times during that time. When the winter melon is fried, drop a few drops of light soy sauce and stir well.
