Braised Winter Melon with Scallops

Cut winter melon into pieces for later use

Wash the scallops in advance and set aside

Chopped green onion

Cut the ginger into thin strips and crush the garlic.

Soak the dried vegetables in advance. If it's too dry, soak it longer

Heat the pan, add oil, add ginger and garlic until fragrant, add dried vegetables and stir fry.

Add some water and simmer. (This dried vegetable is a bit salty, so don't add salt)

Stir fry with scallops

Add winter melon and stir fry, add salt.

Add some water, cover and simmer. Add some soy sauce and other seasonings when serving. (I added too little soy sauce)
Tips:
1. Dried vegetables should be soaked in advance and simmered with a little water to make them more flavorful;
2. The scallops have to be simmered for a little bit of umami flavor;
3. The winter melon is simmered and cooked, and finally add soy sauce to enhance the flavor.
