Bread Self-study Course Lesson 10: Orange Bread

Weigh 500g of T65 wheat flour, 10g of refined salt, and 40g of white cotton sugar, and mix them evenly.

Weigh 5g of yeast and 100g of purified water at 20°C and stir to make it fully dissolved.

Pour in the yeast liquid and stir until it is fully absorbed by the wheat flour.

Gradually add 310g of 20°C clean water in several steps, while stirring, pay attention to the softness and hardness of the surface.

Weigh 25g of orange juice. The original recipe was orange blossom water. I didn’t have it at home, so I used orange juice instead.

Add orange juice to the unformed dough and stir to make it fully dissolve.

Weigh 25g of butter and use a microwave to heat and soften it slightly.

Pour the softened butter into the unformed dough and knead it into a smooth dough. Cover with a slightly damp cloth and carry out the first fermentation: 2 hours. When fermentation is halfway up, fold the dough in half.

Shave out the peels of two oranges and marinate them with an appropriate amount of white cotton candy.

After the first fermentation is over, knead the dough into quarters and gather the dough into a ball. Cover with a slightly damp cloth and let stand for 15 minutes.

After the rest is over, roll the dough into a round shape.

Spread a layer of sugar pickled orange peel.

Turn over.

Spread a layer of sugar pickled orange zest.

Fold it over again, pressing the edge tightly.

Pinch both ends with both hands and twist them into a twist.

Then press into a spherical shape.

Make it into a smooth dough, cover it with a slightly damp cloth, and carry out the second fermentation: 1 hour.

After the second fermentation is over, make a polka cut with a blade and sprinkle with dry wheat flour (for garnish).

Set the oven to 240 degrees, bake up and down, and preheat for 10 minutes. After that, pour about 50g of water (water bath method, outside the recipe) into the empty baking pan at the bottom of the oven, put it in the baking pan with dough, and bake for 23 minutes.

After the bread comes out of the oven, let it cool on the grill.
