Breadmaker Version Old-fashioned Bread

Put the starter materials: 140g high-gluten flour, 60g low-gluten flour, 16g fine sugar, 160g milk, and 4g instant yeast powder into the bread bucket of the bread machine in the order of liquid first, powder second, and yeast last;

Start the "kneading" function, stir the materials into a dough, and then press "Stop";

Start the "fermentation" function, close the lid of the bread machine, and ferment until the dough rises to the maximum and begins to collapse, and the interior is covered with "honeycombs";

Add all dough materials except butter, 140g high-gluten flour, 60g low-gluten flour, 64g fine sugar, 1 teaspoon of salt, 16g milk powder, 60g whole eggs, 36g milk, first add milk, then whole eggs, salt and sugar;

Add flour and milk powder;

Start the "kneading" function, open the lid and knead until the end of the program,

After "kneading the noodles", add softened butter, select the one-button bread program, determine the weight and burning color, and press the "start" button. If you are "lazy" at home, just go and play until the bread maker program ends and you are asked to perform step 16.

I overcame it. I opened the lid of the bread maker when kneading the dough, and closed the lid when fermentation. After the fermentation was over, the bread maker completed the second mixing, "I" pressed the "Pause" button, took out the dough and rounded it into four parts. Leave the upper cling film to relax for 15 minutes;

After relaxing, knead the dough into four long strips, about 30 to 40 cm long;

Arrange the four noodles crosswise;

Every two lines are stacked in the same direction;

Fold again in the opposite direction; repeat 11 and 12 until the noodles are folded to the end (usually three times, up to four times);

Fold the edge to the bottom to form a ball;

Put the bottom of the bread into the bread bucket, close the bread machine cover, continue the bread machine program, and carry out the second fermentation;
15.
After the fermentation is over and before the baking starts, press the "Pause" button, apply a layer of egg liquid on the surface, close the lid, continue the bread maker program, and start baking;
16.
After baking, immediately take out the bread and place it on the wire rack. Brush the top and all sides with melted butter while it is hot. You can brush it several times.
