Last Sunday, thinking that Ang's father was coming back, he went to the big vegetable market with his mother and Ang Bao early in the morning and bought a bunch of vegetables. I slandered myself too, so I bought some and cooked a pot of brine. Because of my throat, the amount of chili was less than usual. I only ate tofu and eggs for the time being. The taste was moderate, and others I didn’t taste the meat, but it was praised by my family. Is this the rhythm I want to continue?

Brine Platter

1. Various materials for brine ingredients.

2. Wash the eggs and boil them in the pot. Sprinkle some salt while cooking to avoid cracking

3. Soak the boiled egg in cold water and break the shell with a small spoon.

4. The tofu is fried directly. For the sake of safety in the mouth, rinse it again with water and drain it for later use.

5. Scrap the skin of the pork belly with a knife, and remove the fingertips of the chicken feet.

6. Put them in a pot and blanch them together.

7. Take it out of blanching water, wash it under running water and set aside.

8. Take a deep soup pot, add all the brine ingredients to the pot, add another 1000ml boiled water, turn to high heat and boil.

9. Add some salt to the boiled marinade and taste the saltiness.

10. First add pork belly and chicken feet, turn to low heat and cook.

11. After 40 minutes, add the egg, deep-fried tofu and boil.

12. Turn off the water after 1 hour, let the ingredients simmer in the pot for 1 hour, then lift the pot and put it on the plate.

Tips:

1: When braising, simmer slowly throughout the whole process.
2: Ingredients that are easier to cook need to be put in later.
3: Refrigerate and soak overnight for better taste.
