Brown Sugar Red Bean Yokan
1.
Wash the red beans, add appropriate amount of water and fine sugar, into the wall breaking machine, start the "five-grain rice paste" program, and grind into a fine rice paste
2.
Cut the agar into small pieces and soak in cold water for a while. Take out the beaten red bean paste
3.
Add appropriate amount of water to the agar and heat it to 150 degrees Celsius on a low fire to completely dissolve it.
4.
Add brown sugar and beaten bean paste, stir well and remove from heat
5.
Pour into the mold, and sprinkle a few steamed honey beans (or not add)
6.
After allowing to cool and solidify, use a toothpick to draw a circle around the periphery, after the inverted button is released from the mold, cut into pieces and ready to eat
Tips:
1. The mold can be a baked non-stick mold, a silicone mold, or a fresh-keeping box.
2. The coagulation principle of agar and gelatin powder or fish gelatin powder is different, and the effect of the finished product is also different. If gelatin powder is overheated, it will affect the solidification effect. But the agar must be heated to the right temperature to be able to solidify. In addition, gelatin is often used to make jelly and other desserts with a strong sense of transparency and a more tender taste. Agar is relatively full-bodied and is often used to make traditional cakes.
