Prepare all the materials

Add the ingredients except the butter into the mixing bucket of the chef's machine. Turn on the 1st gear to knead the dough and then turn to the 3rd gear to continue kneading.

Knead the dough until the surface is smoother, add softened butter, and continue to knead the dough at level 3 after the butter is absorbed.

When the dough is kneaded to the expansion stage, the stretchability is better and there is a finer glove film and then stop kneading.

Put the dough round in a bowl, set the temperature of the fermentation tank to 28 degrees, and humidity 70%. Put the bottom of the dough into a water tank to humidify, and put the dough into the basic fermentation to about 2 times its size.

To make coconut filling, soften the butter and add fine sugar and stir until it is loose. Then add eggs and coconut and mix well. Finally, add milk and mix well.

Take out the fermented dough, divide it into 2 equal parts after exhausting, and let it rise for 15 minutes after being rounded.

Take out the dough, roll out a long strip of dough, and sprinkle 2/3 of the place with coconut paste (you can leave a little bit on the surface of the dough)

Cover the blank 1/3 of the dough first, and then cover the other side with filling.

Fold the dough in the direction of folding and complete another three-fold fold.

In the direction of folding, gently roll out the dough to about the length of the toast box and cut it from the middle with a sharp knife.

Put the cut side of the dough up into the toast mold, and make 2 pieces of dough.

COUSS Smart Oven CO-660A, select the fermentation program, set the temperature to 38 degrees, put it in the hot water box for humidification, and put the dough into the fermentation until the toast box is about 9 minutes full.

The fermented dough is taken out, and the surface is evenly brushed with egg liquid, and a small amount of coconut filling is sprinkled.

The oven is preheated in advance with 140 degrees and 180 degrees. After the preheating is completed, the toast box is placed in the lower grill and bake for about 35 minutes.

After baking, the toast is hot and unmolded to the cooling rack to let cool.
Tips:
1. The above materials are for two 450g toast molds.
2. Due to the different water absorption of different flours, please do not add liquid materials all at once, depending on the condition of the dough.
3. You can leave a small part of the coconut filling and not add it to the dough. After the second fermentation is completed, sprinkle a little bit on the surface and bake it, the surface will be more beautiful.
4. The toast needs to be covered with tin foil after the toast is baked until the color is beautiful, so as to prevent the color from being too dark. The baking temperature and time are for reference only, please adjust appropriately according to the actual situation.
