First make the middle seed, pour all the middle seed materials into the basin, mix and knead, knead it into a ball, cover with plastic wrap and make it 2-2.5 times larger. (Keep it in the refrigerator at 5°C and ferment for 17-24 hours, or it can be fermented at room temperature)

Put all the main dough materials except butter into the bread bucket, then tear the fermented middle seeds into small pieces and add them to start the kneading process.

After a kneading process is over, the thick film can be pulled out, and softened butter is added to continue a kneading process.

Until the complete stage, a thin glove film can be pulled out. (Knead the dough to make the mask, the bread will taste good)

Take out the dough, roll it into a bowl and cover it with plastic wrap to ferment it, leave it at room temperature to ferment 2-2.5 times its size. Dip your fingers in the flour and poke a hole without shrinking, indicating that it is ready.

Press and exhaust the dough, divide it into 6 equal parts, cover with plastic wrap and wake up for 15 minutes

Take a dough and roll it into an olive shape, the longer the better.

Take a piece of dough and knead it into a thin strip, preferably 40 cm long, and then fold it in half.

In the middle of the oven, bake at 180° for 20 minutes. Cover the surface with tin foil immediately to prevent the color from becoming too dark.
