Butter Hass Bread

Put all the medium dough materials into the bread machine bucket.

Start the kneading program for 10-20 minutes and mix into dough;

Take out the dough, knead it and place it in a container, cover it with plastic wrap, and put it in the refrigerator to ferment for 17 hours to become a medium type dough;

The state of the fermented medium kind of dough, the dough is doubled in size and has a honeycomb shape.

Tear the medium type dough into small pieces, put all the ingredients of the main dough into the bucket of the bread machine, start the kneading program for 20 minutes, and mix the dough.

The dough state must be able to easily pull out the thin glove film, so that the baked bread will be soft.

Divide the dough into four equal parts, knead it round, and let it stand for 15 minutes in the middle;

Roll out the dough into an oval shape, and fold it in half along the length direction.

Fold it in half again, pinch tightly at the closing area, be sure to pinch tightly.

Shape it into an olive shape and place in a baking tray.

Put the baking tray in the oven, put a bowl of boiling water, turn on the fermentation mode, and carry out the second fermentation;

Ferment for about 40 minutes to double the size.

Sift an appropriate amount of dry flour on the surface;

Use the blade to make 3-5 knives on the surface. The old-fashioned razor blade I use is quick and very easy.

Put it in the oven, the upper and lower pipes are 180 degrees, the hot air mode, bake for 20 minutes, after the color is moderate, cover with tin foil, and the temperature must be adjusted according to your own oven.
