Candied Orange Peel Toast

Prepare all the ingredients for making bread.

Put all the ingredients except the candied orange zest into the bread machine, and start the dough menu for kneading.

After 25 minutes, add the candied orange peel and continue mixing for 3 minutes.

Then the bread will stop mixing and the current menu will be cancelled at this time, and the dough status will be checked.

After finishing the dough, put it in the bread machine and select the fermentation menu for basic fermentation. The time is 30 minutes.

After 30 minutes, the dough will rise to about twice the size of the original dough.

Take out the fermented dough and ventilate the dough, knead it round and cover it with plastic wrap to proof it for 15 minutes.

After 15 minutes, take a dough and roll it into an oval shape.

Then turn it over and fold the two sides in half toward the middle.

Roll up from top to bottom, pinch tightly at the closing.

After being reshaped, put them into the square toast mold of the school kitchen.

Put the dough into the oven for secondary fermentation for about 50 minutes. The dough will be fermented until the mold is 9 minutes full and take it out. Sift a layer of dry powder on the surface.

Use a knife to cut out the pattern.

Put it into the preheated oven for baking, the temperature is 150 degrees for the upper tube and 160 degrees for the lower tube, and the time is 35 minutes.

After baking, take it out and let cool.
Tips:
1. When the bread is put in the oven for the second fermentation, put a bowl of warm water in the oven to increase the humidity of the fermentation in the oven.
2. During the baking process of the bread, the top color is enough to cover the tin foil to avoid the top baking.
3. You don’t need to sprinkle the dry powder and brush the egg liquid directly. I forgot to reserve a little egg yolk when making the bread, so I sprinkled the dry powder and cut the pattern.
4. If the bread is not formed into a mountain shape, but a square shape, the second fermentation of the bread will be 8 minutes full and the lid can be closed to start baking.
5. Because different ovens require different temperature and time, please adjust according to your own oven temperature.
