Cantonese Five-nen Moon Cake

All the dried fruits need to be roasted before use. Put the dried fruits in the middle of the oven and bake at 150 degrees for about 5-10 minutes.

Cut the orange cake and winter melon sugar into small cubes for later use. Put all the prepared dried fruits, orange cake and sugar winter melon in a large bowl and mix well, then pour in the fine sugar

Pour in vegetable oil, rose sugar, white wine, and water and stir evenly with chopsticks

Finally add the cake powder, knead it into a ball, and serve as the five-core filling (note that the cake powder should not be added at once, leave a little bit, if the kneaded five-core filling is of the right degree of hardness, then add the cake powder

Add liquid soap to peanut oil, stir and mix well, then add invert syrup, stir and mix well

Sift in low-gluten flour, knead it into a dough, wrap it with plastic wrap and relax for 1-2 hours (I think the crust will return to the oil faster when it relaxes for a long time)

After the dough is relaxed, divide it into 18 grams, and the five-core filling is also divided into 45 grams in one portion. Pat some flour on the palm, take a pie crust dough, and flatten it on the palm.

Put the five-nut filling in the middle of the dough

Use two hands to slowly push up the pie crust and wrap the filling until the filling is completely covered. Attention, try to make the crust evenly thick and do not expose the filling. After wrapping, it will become a ball. Pat a little flour on top to make it easy to demould later

Sprinkle some flour on the moon cake mold, then knock out the excess flour, and put the ball dough into the moon cake mold

Press the moon cake mold directly on the baking tray, press out the moon cake pattern, lift the moon cake mold, the moon cake embryo is ready

Make all the moon cake embryos one by one, and spray some water on the surface of the moon cake

Put it in the oven preheated to 200 degrees, bake for about 5 minutes in the middle layer, after the mooncake pattern is set, take it out and brush the surface with egg yolk water (only the surface, not the side)

Then put it in the oven, adjust the temperature to 180 degrees, bake it until the surrounding is a drum shape, and the crust is evenly colored. It takes about 10-15 minutes to bake (depending on the fire power of each oven)
