Every year on the Mid-Autumn Festival, my family’s mooncakes are made by ourselves, and friends and relatives also ask for this mooncake by name. It is the classic Cantonese moon cake, the moon cake with lotus seed paste and egg yolk. Do it yourself purely by hand, with real materials, and feel more at ease.

1. The preparation of mooncake skin: After mixing all-in-gluten powder and milk powder, sift it twice, the mooncake skin will be much smoother by doing this.

2. Add liquid soap to invert syrup and mix well, then add salad oil and mix well.

3. Add the sifted powder to the well-mixed liquid bowl and mix well, knead it into a ball, don't knead it. Wrap it in plastic wrap and let it sit for an hour.

4. The salted egg yolks were soaked in salad oil to remove the fishy. There are 20 salted egg yolks in the picture. I used 10 salted egg yolks to make the egg yolk crisps. They were not separated when they were photographed.

5. After the lotus seed paste filling is fried by hand, let it cool, and divide it into small groups according to 70 grams.

6. Take a small ball of lotus seed paste and squeeze it, put a salted egg yolk, and wrap it. The lotus seed paste and egg yolk filling is ready.

7. The mooncake skins that have been put in place are divided into small groups according to 20 grams.

9. Then add lotus seed paste and egg yolk filling, wrap, and knead into a smooth ball.

10. Put a little cake powder on the inside of the moon cake mold, put the dough on the mold, put the dough into the mold, and press out the moon cake model. The model can be selected according to your preference.

11. Put silicone oil paper on the baking tray, put the finished mooncake embryos into the baking tray, and spray some water to prevent the mooncakes from cracking.

12. Preheat the oven at 190 degrees, bake for 25 minutes, among which bake for 5 minutes, take it out, spread a layer of egg mixture, put it in the oven, and continue to bake for 20 minutes.
