Chicken Tofu with Tricholoma

Prepare raw materials;

Add salt, ginger slices, cooking wine and a small amount of starch to the small pieces of chicken thighs, and marinate for ten minutes;

Heat the pan, add a little oil, add the chicken thighs and stir fry;

When the surface of the chicken thigh is slightly yellowed, add tofu cubes;

Add light soy sauce, oyster sauce and appropriate amount of water;

Cover and simmer for three minutes;

Add the mushroom slices and cook for three minutes;

Add seasonings such as salt and pepper;
9.
Finally, add green garlic and red pepper and stir-fry evenly;
10.
Put it in a small bowl and put some green garlic on it.
Tips:
1. After the chicken thigh is cut into small pieces, add some salt, cooking wine, ginger and starch, and then marinate; when sautéing the chicken, be sure to stir-fry the fat in the chicken skin slightly, that is, the skin is slightly brown;
2. I choose Chiba tofu, which is not easy to disperse after cooking for a long time; just like other tofu, I fry it to help it shape;
3. Add green garlic to increase the fragrance, but for the sake of beauty, put half of it first, and then leave some on the surface of the dish; when you eat, mix it into the dish and it will be cooked in one go. If you don't have red pepper, you don't need it, it's mainly used to add color.
