Chinese Leek Razor Clams

.First soak the bought razor clams in light salt water, add some white vinegar, soak for a few hours, let them spit out the sand;

Boil water in a saucepan, add ginger slices and cook for two minutes;

Put the spit out razor clams and cook until the mouth is slightly opened, then turn off the heat and drain the water;

Take out the meat of the razor, squeeze out the sand from the abdomen of the razor, and then rinse it off;

Heat a pan, add a little oil, and saute the ginger;

Add the freshly cleaned razor clam meat and stir fry;
7.
Add the leek stalks and red pepper shreds and stir fry first;
8.
Add the leeks and stir fry together until the color changes;
9.
Season with salt and stir-fry evenly;
10.
Serve into the plate.
Tips:
1. If you don’t want to eat the razor clams, you can raise them in light salt water. When eating, add some white vinegar to soak for a few hours to let it spit sand; or put the razor clams and a small amount of water in the fresh-keeping box and keep shaking. Part of the sand can be spit out, it must be repeated several times;
2. Add a few slices of ginger when blanching the razor clams to get rid of the fishiness, and the razor clams can be fished out with one mouth; when taking the razor clam meat, be careful not to have a black line on the side of the clam shell, and squeeze the middle abdomen clean. Although it is troublesome to handle, it is safe to eat;
3. When frying, sauté the shredded ginger first, immediately add the prepared razor clam meat and stir fry, then put the leek head and red pepper shreds, and then put the leek leaves, after stir-frying, you can add salt to taste, no need to fry too long.
