Prepare three preserved eggs and one lactone tofu (I only use half of the tofu).

Slice the tofu, divide the preserved egg into four, and prepare the plate (four preserved eggs are the easiest, if you want to arrange the plate more beautifully, divide into eight more delicate). Our local preserved eggs are eaten directly. They are not steamed. The steamed preserved eggs are easy to cut, but the taste changes.

The millet is half spicy, and a little bit of coriander is sprinkled on the tofu. You can also add a little green onion. Depending on your personal preference, the spicy three or two millets are more enjoyable and more casual.

I started to season the sauce. My sauce is relatively simple. The ratio of vinegar: light soy sauce: oyster sauce is 3:1:1. I personally like to add a little more vinegar. The specific operation depends on personal preference. Finally, I add a little homemade sesame chili oil. Stir it well. I didn’t add salt today. The saltiness of light soy sauce and oyster sauce is almost the same. You can add a little salt according to your own taste. In most cases, I will add a little ginger and minced garlic, and I can adjust the taste of the sauce appropriately every time! Try which one is more suitable for your own taste! The sauce can be adjusted more appropriately, the lumpy tofu is not easy to taste, you can pour more sauce and eat it with it. (The method of sesame chili oil: first chop the dried chili peppers, add a little chili powder to make the color better, add sesame seeds, boil the pot to dry, add oil, and pour it on the chili peppers after the oil is hot. Yes, you can also put a little more pepper in the pot. After the oil is hot, remove the pepper and pour it on the peppers in batches.)

Pour the sauce on the preserved tofu, and the refreshing and delicious preserved tofu is ready to serve!
Tips:
1. The lactone tofu used in tofu can be eaten directly, if you like to cook it, you can try it yourself. I personally think that ordinary tofu is also ok, and ordinary tofu is steamed and cooled as much as possible before using it, so as to get rid of the tofu smell.
2. The sauce depends on the preferences of each company, adjust the amount according to your own taste! It is truly delicious if it suits its own taste.
