Wash the shallots and pour water into them, cut into large sections, shred the onions, and put them in a small pot with the arowana rice oil.

Turn on the fire and heat it up, then turn to a low heat and boil it slowly.

Observe and flip in the middle.

The green onions will slowly turn yellow.

After all the colors have changed, turn to the high heat and remove the dried shallots.
Tips:
1. After washing the green onions, water should be sprayed to avoid exploding the pan. If there is no time to spray the water, you can use absorbent paper to absorb the water.
2. A small amount of ginger can be added to the scallion oil to taste. Should not be too much.
3. The dried shallots must be removed while it is hot. If they are not removed in time, the shallots will continue to be hot fried. After the oil cools down, the dried shallots will inhale a large amount of fat. Remove them while hot and store them separately.
