Christmas Fondant Cookies

1. Preparation materials: 300g low-gluten flour, 80g butter, 100g white sugar, 140g powdered sugar (for icing), 3 eggs, 40g whipped cream, right amount of baking powder

2. Cut the butter into small pieces and melt at room temperature (in winter, the room temperature is low, and it melts in water here)

3. Pour the white sugar into the melted butter

4. Send at medium speed until chrysanthemum shape^.^

5. Beat one egg and one yolk in a bowl (reserve the egg whites for frosting later)

6. Pour the egg liquid into the whipped butter

7. Stir well

8. Take an appropriate amount of light cream and pour it into the butter paste and stir evenly

9. Take an appropriate amount of baking powder and add it to the low-gluten powder, stir evenly, and sift into the paste

10. Stir evenly with hands or chopsticks (the dough should not be too hard, increase or decrease the amount of flour according to the specific situation)

11. Wrap the kneaded dough in plastic wrap and put it in the refrigerator for more than half an hour to wake up

12. Take out the awake noodles and roll them into a thin and even dough, about 3~5mm

13. Use a biscuit mold to make a shape

16. Cover the baking tray with greased paper, put the dough in the baking tray, leaving a proper gap between each other

17. Bake in the oven, and heat the middle layer at 170 degrees for 15 minutes. After baking, take it out and let it cool.

18. Frosting preparation: Add a little lemon juice or white vinegar to the egg white to make bubbles, add powdered sugar and continue to beat until it is thick and yogurt-like. Divide evenly into several bowls, add coloring (according to your preference), mix thoroughly and set aside

20. Mount the icing sugar and place it on a plate to dry (if it is not dry, put it in the oven at 80 degrees for 3~4 minutes, pay attention to observe to avoid blistering)

Tips:

If you want the biscuits to be softer, you can add some tartar and baking soda in an appropriate amount. The amount of flour should be less, and the dough should be sticky. It will be easier to knead after refrigeration.
