Cocktail Roasted Wing Root

Prepare ingredients: chicken wing root (10 roots), cocktail (orange flavor)

Scallion knots, ginger slices, bay leaves, star anise, rock sugar

Wash the roots of the wings first (it is better to make a double knife to taste), put cold water into the pot, boil on high heat, boil for 2 to 3 minutes, turn off the heat and remove

Rinse the blood foam with clean water and control the moisture for later use

Pour oil in the pot, add rock sugar (or white sugar), and cook until bubbling

Pour the wing roots and stir-fry for a while, then add sliced ginger, green onion knots, star anise and bay leaves and continue to stir-fry for about 1 minute

After frying the aroma, pour in oyster sauce, fresh soy sauce, dark soy sauce, stir fry evenly, pour into the cocktail, cover the pot and turn to medium-low heat for about 30 minutes

Squeeze a little lemon juice 2 minutes before starting the pot (if you don’t have it, you can leave it alone)

If the salty taste is not enough, you can add a little salt, and then the soup will thicken on the fire.

Tips:
1. Using a knife on the root of the chicken wing will make it easier to taste
2. Before putting the chicken wing roots into the frying pan, be sure to control the water dry, otherwise the oil will splash everywhere
3. The cocktail itself is a bit sweet, so you should not put more rock sugar
4. Lemon juice can play a role in flavoring, and you don’t need to use it
