Cocoa Cake with Glaze

Beat the egg yolks and egg whites in two water- and oil-free basins, and put the egg whites in the refrigerator for later use. Add cocoa powder to hot water and mix well.

After letting cool, add corn oil, emulsify the cocoa liquor and corn oil with a manual whisk, and no oil stars can be seen.

Sift the cake flour into the cocoa liquor.

Make a Z-shape and mix until no dry powder is visible.

Add the egg yolk in three portions. After adding each time to mix evenly, add the next time.

Cocoa paste with mixed egg yolks.

Add the egg whites to the lemon juice, beat at medium speed until thick, add one-third of the fine sugar, add sugar once when the texture appears, and use low speed for the last time to prevent overspreading.

Beat to dry foaming, because it is not a cake roll, so it is not wet foaming.

Add one-third of the beaten egg whites to the cocoa paste with egg yolks and stir evenly with a spatula.

Then pour it into the remaining meringue and mix evenly with the same technique.

Pour the mixed cake batter into a square baking pan covered with greased paper, put it into the lower layer of the Dongling K30A oven preheated to 180 degrees in advance, and bake for 18 minutes.

Take out the baked cake, let it dry for three minutes, and buckle it upside down on the drying rack, tear off the oily paper at the bottom. After cooling, use a round mold to press out 15 round cake slices.

Add 300 grams of whipped cream with 25 grams of sugar, and pass over ice water. Then use the decorating nozzle to squeeze the cream on the round cake slice, three slices in a group.

Then squeeze the cream around the cake and use a baker's spatula to smooth it out. It doesn't matter if it is uneven. Add 60 grams of whipped cream to the milk pan, heat it over a low heat to make small bubbles, immediately remove from the heat, then add 40 grams of small pieces of dark chocolate, mix until it melts, let it cool, and then pour it on the cake, flowing naturally.
