Coconut Pumpkin Pie

Peel and seed the pumpkin, cut into thin slices, and steam in a pot over water.

Scoop in white sugar while it's hot.

Stir into pumpkin puree.

Pour in 150 grams of glutinous rice flour and 50 grams of flour, and mix well.

Finally, pour 30 grams of coconut flour and mix well.

Stir all the materials evenly into a paste without particles.

Preheat a non-stick pan, pour in appropriate amount of cooking oil, scoop in a spoonful of pumpkin paste, flatten, and fry slowly over low heat. Sprinkle with ripe sesame seeds.

Fry until golden on both sides.
Tips:
Pumpkin will produce water when steamed in the pot, so there is no need to add water during the cooking process.
Steamed pumpkin sliced into thin slices is faster to steam and save time.
