Coconut Pumpkin Soft Cake

Peel the pumpkin and cut into thin slices, heat it in the microwave or steamer until soft, then use a spoon to grind into pumpkin puree, let cool and set aside.

When the pumpkin puree is cool, pour in coconut milk and stir well.

Add white granulated sugar and stir until the sugar dissolves.

Finally, add the flour point by point and stir thoroughly to form a paste.

Pour a little oil in a non-stick pan and preheat for one minute on low heat.

Use a spoon to scoop the pumpkin batter into a non-stick pan, spread it flat, and fry on low heat until golden on both sides.
Tips:
1. Since old pumpkins are relatively sweet, don't put too much white sugar, you don't need to put sugar if you don't like to eat too sweet.
2. Coconut milk contains coconut oil, so you don't need to put too much oil in pancakes, just a little.
