Cold Bitter Gourd

Wash the bitter gourd and cut into thin slices.

Bring the water to a boil, add a little salt, and the chopped bitter gourd, blanch for 1 minute. Ensure the bitterness of bitter gourd is reduced.

Rinse the blanched bitter gourd with cold water, squeeze out the excess water of the bitter gourd and set aside.
4.
Add salt, a little sesame oil, and a little sugar to bitter gourd and mix. Add three seasonings according to taste.
5.
Sprinkle white sesame seeds at the end.
6.
It tastes better after being refrigerated.
