Cold Bitter Gourd

Prepare ingredients: bitter gourd, red pepper, chives and other ingredients;

Wash the bitter gourd, remove the seeds, scoop, and cut into thin slices;

Pickled bitter gourd slices are marinated in salt for 10 minutes;

Put the green onion in the water and boil it with water, add the bitter gourd, and boil it until cooked;

Soak the cooked bitter gourd in ice water;

Drain the ice water and put it on a plate;

Pour in olive oil, sesame oil, salt, red pepper, chives and mix well.
Tips:
1. Salting bitter gourd can remove the bitterness;
2. Adding chili not only adds flavor, but also removes bitterness;
3. Iced bitter gourd can not only remove the bitterness but also keep the color emerald green.
