Cold Bitter Gourd

This is the bitter gourd on the tree;

Take it off when it grows up, soak it in clean water for 1-2 hours, and then wash it with salt water;

Wash the cutting board and knife with boiling water and dry, cut the bitter gourd in half to remove the seeds, and then diagonally cut into slices, about 2-3 mm in thickness;

Then put in a large bowl, put 1-2 tsp of salt, gently stir evenly with your hands, let stand for 20-30 minutes, so that the water from the bitter gourd slices can seep out, then pour out the seeping water, and then freeze Rinse with boiling water so that the bitter gourd will not be too salty;

Put about 1/4 tsp of sugar, 1/4 tsp of chicken essence, 1 tsp of sesame oil, 1-2 tsp of chili oil in a bowl. Stir gently, don’t be too rough and vigorous, as it is easy to break the bitter gourd slices and stir. After being evenly placed on a plate or bowl, it can be used for pre-dinner snacks and snacks.
Tips:
1. Pick the melon while it is tender, soak it in clean water for 2-3 hours. Although there is no pesticide, after all, it has been in contact with mosquitoes, flies and insects, and then washed with salt water;
2. The melon slices should be cut evenly thick;
3. Pickling in brine can remove the bitterness, but after pickling, rinse with cold boiled water to avoid excessive saltiness;
4. Don't stir too roughly when seasoning, as the melon slices are easy to break.
