Because the scallop shells I got were incomplete, I couldn't make baked or something. So I can only use the meat. So I decided to make the whole fresh and tender custard, and then simply make the fresh shellfish into juice and pour it on the custard. In order to make the soup clear, only the middle shellfish is used.

Ingredients

1. Beat the eggs, add 250ml of stock or water and stir evenly (a little salt can be added)

3. Cut green and red peppers, shiitake mushrooms, and green onions into small cubes

5. Add a little cooking wine and pepper to marinate for 5 minutes

6. Add a small amount of oil to the wok and stir-fry the chopped green onions, mushrooms, and green and red peppers, then add fresh bedding and stir fry quickly

7. Immediately add a cup of hot water, add salt, water and starch to thicken into a thick soup

8. Take out the steamed custard and remove the plastic wrap

9. Just pour the prepared colorful fresh shellfish on the custard
