This dish uses fresh small yellow croaker that is about 10 cm in size and is cooked by deep-frying. With carefully prepared sauce, the taste is crispy on the outside and tender on the inside, fresh and delicious. The fried yellow croaker is in a curly shape, as if a small fish leaping up cleverly. Even without the old man fishing in the river, this dish is still full of the festive meaning of leaping into a dragon. So I originally gave this dish another name, called Dudiao Hanjiangxue.

Cooked Yellow Croaker

1. The yellow croaker is packed and sliced from the middle.

2. Then marinate with salt, cooking wine, hoisin sauce and white pepper.

3. After the yellow croaker is marinated, pat the powder and fry it in the pan. When it is fried, use the chopsticks to lift the tail and fry it into the pan to set the shape.

4. Fry the small yellow croaker until golden and ripe, remove and serve.

5. Cook with soy sauce, sugar, and white vinegar to make a sauce.

6. Pour it on the squeezed yellow croaker.

7. Add coriander and other auxiliary materials to decorate the plate.

Tips:

1. When cleaning yellow croaker, the black membrane of the abdominal cavity must be washed.
2. The yellow croaker can be sliced left and right, which makes it easier to curl into shape when fried.
3. If you are not sure about the taste of the cooking juice, you can choose the finished sauce.
