Corn Pudding

Pour the cornmeal into a large bowl, add a small amount of flour and mix well, use warm water to make a paste, then cover the lid and place it in a higher temperature place for natural fermentation. My home is heated by the floor, so I put it directly in the corner of the living room, and it will be enough to ferment for almost overnight.

Pour the soda powder into the fermented corn paste with water, and stir it clockwise or counterclockwise with chopsticks or other tools.

Prepare the steamer, put in cold water, bring the water to a boil, and then spread the cloth.

Pour the corn batter on the spread cloth, the thickness is determined by yourself.

Continue to pave the upper layer.

After spreading, cover the pot and steam on high heat for 15 minutes. The thickness of my shop is not thick this time, and the steaming time is shorter. (After spreading, you can put some dates, nuts, or raisins).
