Crab Meat White Sauce Croquette
1.
Put the butter in the pot.
2.
Add flour and stir fry for a fragrant flavor.
3.
After the milk is warmed in the microwave, add it in portions (it is easy to form granules if heated once, and the milk is heated to prevent granulation).
4.
Add crab meat and continue heating.
5.
Add bay leaves and continue heating to steam the excess water. Adjust the flavor with salt and pepper.
6.
Spread in a container and put in the refrigerator for 2 hours.
7.
After taking it out, remove the bay leaves, divide them into 10 pieces, and coat them with flour.
8.
After the egg wash, wrap it in breadcrumbs.
9.
Fry into the frying pan. Note that the oil is higher than half of the croquette. Otherwise the surface is easy to break.
10.
Strain the juice from the canned tomatoes, add oil to the pot, add garlic, and when the aroma comes out, add the canned tomatoes and crush them.
11.
After filtering, return to the pan, add canned tomato juice and stock, and heat to evaporate the water until the amount is reduced by half. Season with salt and pepper.
12.
12. Add the butter, turn off the heat, and use the remaining heat to melt the butter.
13.
13. Spread the tomato sauce on the plate first, and put the fried croquette on the sauce, with lettuce, celery and tartar sauce.
