Crab Tofu

Wash the tofu, cut into long strips, and place them on a plate. If you don’t care about it, you can just cut it into small pieces and put it in a bowl. If it’s a banquet, it’s better to put it in a nice look. Place it in the microwave oven for 2 minutes. If you don't have a microwave oven, just use a steamer to boil some water, put the tofu in, and steam it for 5 minutes. If you don’t put it on a plate, you don’t need to steam it.

Prepare four salted egg yolks, put them in a small bowl, microwave on high heat for 30 seconds, take out and crush them into egg yolks with a spoon. I am a lazy person, just chopped it up.

Put the salted egg yolk on the chopping board, cut it into pieces with a knife, and press it slowly with a spoon. It's okay if you don't press it, I just put it in the pan and fry it.

Heat the wok, pour in the right amount of cooking oil, turn off the heat, put in the chopped salted egg yolk, add cooking wine to remove the smell of the egg yolk, and slowly fry it until fragrant.

While frying, use a spoon to slowly crush the salted egg yolk to get the aroma of the salted egg yolk. Add a little water. I didn't add salt. I think the salty taste of salted egg yolk is enough. You can taste the saltiness with chopsticks, and add a little salt if it feels light.

After sautéing again, add a little cornstarch, stir evenly, a little thicker, and it's ready. Remove the tofu from the microwave, pour the salted egg yolk on the tofu, and sprinkle with chopped chives.
