Cranberry Cookies

The butter is softened at room temperature, and it softens to the point that there is a small hole in the finger

Add powdered sugar, use an electric whisk to beat the powdered sugar and butter evenly, just a few turns, the butter does not need to be beaten, or use a spatula to mix the butter and powdered sugar well.

One egg, add in 3 times, each time you add it, stir well and then add it next time, just beating a few times. Similarly, don’t over-whip the butter

Use a knife to chop the dried cranberries into small pieces so that they are more evenly distributed

Sift in low-gluten flour. You don't need to sift the flour in all at once. Because of the difference in egg size, in order to prevent the dough from drying out, leave some flour at the end and don’t sift it all in.

Place plastic wrap in the square biscuit mold

Put in the dough and press to shape

Put the shaped dough into the freezer compartment of the refrigerator, which is the frozen layer. Freeze for an hour

If you don’t have a mold, you can use the tissue paper tube at home to reshape it. The dough is roughly straight and long, wrapped in plastic wrap

Tuck into the paper towel tube, don’t make the dough bigger than the diameter of the paper towel tube, or it won’t fit in

Take it out to check if the dough underneath is tight, and put it in the freezer of the refrigerator to shape it.

The shaped dough is taken out and sliced, without thawing, cut directly, I cut thinly, because there are too many people, the thickness is not enough.

In the oven at 170 degrees for 15-20 minutes, the surface will be colored, and the cranberries will turn black if you bake for too long
Tips:
There are differences in the size of the eggs, so don’t put the flour in one go. If the dough is too dry, later adjustments will affect the quality of the finished product. Make cranberry biscuits. You don’t need to beat the butter.
