Crisp and Refreshing---sweet and Sour Ginger

Rinse the ginger and let it dry naturally on the surface, remove the pieces and scrape into thin slices.

Add a little salt to the ginger, mix well and marinate for 30 minutes.

Pour the sugar into the rice mixture and mix thoroughly.

Squeeze the ginger water to dryness, put it into an oil-free and water-free sealable container, pour the sweet and sour juice and mix well; seal the container and put it in the refrigerator for more than half a day.
Tips:
1. The amount of sugar or vinegar can be appropriately increased or decreased according to personal taste.
2. Zijiang should not eat too much at one time, so as to prevent the body from absorbing a large amount of gingerol, which will cause dry mouth, sore throat, constipation and other symptoms of irritation.
