I prepared a lot of crispy grains when I made bread before, and I couldn't use it up at all, so I will continue to use it this time~~

material:
Main dough: 250g high-gluten flour, 45g egg liquid, 50g fine sugar, 3g salt, 3g yeast, 125g milk, 25g butter, 80g raisins
Surface decoration: appropriate amount of egg liquid, appropriate amount of crispy grains"

Crispy Raisin Meal Pack

1. Dry the grapes and soak them in water for 30 minutes

2. Pinch the moisture and set aside

3. Pour the main dough materials except butter and raisins into the bread bucket, and put the bucket in the bread machine to fix it, select the "dough" program, including two stages of kneading + fermentation, the default time is 1:40

4. Add butter that has softened at room temperature 15 minutes after the program starts

5. 5 minutes before the end of the dough, add the raisins

6. After kneading the dough, the raisins have been evenly wrapped into the dough, and the program automatically enters the fermentation stage

7. Wait until the program is over and fermentation is complete

8. Take out the fermented dough, knead and exhaust

9. Divide into 20 parts

10. Relax for 10 minutes after spheronization

11. Take a loose dough and flatten it

12. Round again

13. Then put them in the baking tray one by one, and then put the baking tray in a warm and humid place for the final fermentation

14. You can make milk crisps while the dough is fermenting. Pour the required ingredients into a small bowl and rub them by hand. (Materials needed to make milk crisps: 15g powdered sugar, 25g low-gluten flour, 2g milk powder, 20g butter , There are more crisps made with this amount, and you can't use it up at a time)

15. Until it is kneaded into small granules, the milk puff is ready

16. The dough has risen to about 1.5 times its size, and the fermentation is complete

17. Brush a layer of egg wash on the surface of the dough

18. Then evenly sprinkle a layer of crispy grains

19. Put the baking tray into the lower and middle level of the preheated oven, 180 degrees, about 25 minutes

20. Demould immediately after being out of the oven, and keep it sealed after cooling

Tips:

1. To make such a round small meal bag, you can put it into the baking tray for the second fermentation after the initial rounding. When I make it, it relaxes first and then rounds it again before putting it into the baking tray. I personally feel that it will be shaped like this The small meal bag tastes slightly better;
2. This time I used crispy grains that were not used up before for decoration. You can also sprinkle sesame or almond flakes for decoration as you like;
3. During the baking process, pay attention to cover with tin foil after coloring to avoid baking;
