The pig's feet are cleaned, and the remaining pig hair is removed with a knife. Put water in the pot, pour a little cooking wine, a few slices of ginger, and trotters in a pot under cold water. Boil for about five minutes and turn off the heat.

Pour the boiled pig's trotters into a basin and wash off the foam with cold water.

Put oil in the pot, put the rock sugar in and fry the sugar color, then pour in the washed trotters, fry a large piece of ginger, and put the washed anise (star anise, cinnamon, angelica, licorice, pepper, dried chili) ) Put it in and stir fry. The pig's trotters are slowly colored, turn off the heat when the soup is halfway, and then pour the pig's trotters into an electric pressure cooker with the soup, and press for about 30 minutes. Take out the boiled pig's trotter, put greased paper on the baking tray, put the skin side up, evenly place it on the baking tray, heat up and down 180 degrees, put it in the oven and bake for 15 minutes

Tips:
Don't put salt in the trotters, put more light soy sauce, and taste more delicious. When you think that the color of the pig's feet is not deep enough, you don't need to worry about it at all, and you don't need to add soy sauce. After baking in the oven, the color will naturally become beautiful!
If you don’t have any aniseed, you don’t have to force it. As long as you have pepper, dried chili and barbecue powder, this dish is more than half a success.
It doesn't matter if there is no beer or pressure cooker. Just stir-fry and add about 1500g of purified water. Cover the pot and turn on medium heat until the soup is simmered. It is best to use a cast iron pot, as the water evaporates slowly and the stew is more delicious. I deliberately tried the stewing time, which is almost 80 minutes.
